Job Description

We are seeking a highly skilled and passionate Sommelier to join the award-winning team at Herons, our signature restaurant. The ideal candidate will possess an extensive knowledge of wines, spirits, and cigars, a keen palate, and an unwavering commitment to delivering an extraordinary dining experience. This role is crucial in guiding our guests through our diverse wine program, making informed recommendations, and ensuring the seamless execution of wine service. Key Responsibilities

• Manage the comprehensive wine and beverage program for Herons restaurant, including inventory, ordering, and cellar maintenance.
• Curate and update the wine list to reflect current trends, guest preferences, and seasonal menus, ensuring a diverse and premium selection.
• Provide expert wine recommendations to guests, guiding them through selections that complement their dining choices and personal preferences.
• Conduct regular staff training sessions on wine knowledge, pairing principles, and service standards to elevate the team's expertise.
• Oversee wine storage and handling to maintain optimal conditions and ensure wine integrity.
• Collaborate closely with the culinary team to develop synergistic food and wine pairings.
• Manage wine costs and contribute to beverage revenue targets.
• Maintain impeccable organization and cleanliness of the wine cellar and service areas.
• Address guest inquiries and resolve any concerns related to wine service with professionalism and grace.

Required Skills

• Certified Sommelier (Court of Master Sommeliers or equivalent certification)
• Minimum of 4 years of experience as a Sommelier in a luxury hotel or fine dining restaurant environment
• Exceptional knowledge of international wines, spirits, and varietals
• Proven ability to manage a sophisticated wine program, including inventory and ordering
• Strong interpersonal and communication skills with a guest-centric approach
• Ability to work effectively in a fast-paced, high-pressure environment
• Fluent in English; additional language proficiency is a plus
• Proficiency with POS systems and inventory management software

Preferred Qualifications

• Advanced Sommelier or Master Sommelier certification
• Experience with fine spirits and cigar programs
• Background in high-volume, multi-outlet luxury hospitality settings
• Demonstrated leadership and team training abilities
